Blue Cheese Buffalo Chicken Bombs

Okay, Okay.  We admit that these Blue Cheese Buffalo Chicken Bombs do not quite fit into our Chef Gina’s Love, Adventure, and Recipe Series.

If we stretch, we might convince you that because blue cheese is a type of cheese that it fits nicely with Book 19: Dells, Bells & Veils which features cooking with cheese in Wisconsin.  Or perhaps Book 13: South Carolina Low Country which features fried chicken (well, this recipe uses chicken).  Or even Book 6: Pizza, Pasta & Liberty  (this recipe does involve pizza dough).

Yet, the truth is – sometimes you just can’t rein in unbridled creativity.   When our test kitchen staff created these Blue Cheese Buffalo Chicken Bombs, we weren’t about to keep them a secret.

They are just so, so good.

Because they rely on a premade pizza dough, they are also so, so easy.

You could use these in a lot of different ways, such as an appetizer or a party food. Either way, they are a true hit.

Blue Cheese Buffalo Chicken Bombs

Ingredients:

4 Chicken Breasts, cooked and shredded

1 Cup Hot Wing Sauce

1/2 Cup Onion, chopped

1/4 Cup Scallions, chopped

1 Cup Cheddar Cheese, shredded

1 Cup Blue Cheese, crumbled

1/2 Tablespoon Garlic, minced

1 Package Pizza Dough

4 Tablespoons Butter, melted

1 Teaspoon Garlic, minced

Preheat oven to 400 degrees.  Spray a baking sheet with nonstick cooking spray and set aside.

In large mixing bowl, combine the meat from 4 chicken breasts (that has been shredded), 1 cup hot wing sauce, 1/2 cup chopped onion, 1/4 cup chopped scallions, 1 cup shredded cheddar cheese, and 1 cup blue cheese crumbles.

Unroll pizza dough and cut into 1 1/2 inch squares.

Pick up a square and place a large spoonful of buffalo chicken mixture onto the dough.  Be generous with your spoonful!

Stretch the sides of the dough up from all sides to pinch them together – creating a ball of dough wrapped around the mixture.

Place the dough balls, seam side down on a baking sheet.

Bake for 5 minutes in a 400 degree oven.

While buffalo bombs are in the oven, melt 4 tablespoons of butter and combine with 1 teaspoon minced garlic.

After 5 minutes, remove from oven and coat the now half-cooked dough balls with the garlic butter.

Put back in oven and cook for another 5 minutes.

Cool and plate with your choice of sauce.  We used a bit more hot sauce on top and blue cheese dressing!
