Watermelon Feta Salad – Keeping it Light With Chef Gina
Chef Gina dives into food daily – creating, making, and tasting decadent recipes.
So, sometimes, it is important to “lighten” things up.
But as this Watermelon Feta Salad proves…going light doesn’t have to mean giving up on taste!
That’s why this recipe is a go-to favorite of our fictional Chef Gina.
It has decadent flavor.
Beautiful, inviting color.
And helps Chef Gina maintain her figure while living on the road traveling the United States.
Ingredients:
4 Cups Watermelon, cubed
2 Cups Cucumber, cubed
1/4 Cup Cilantro, chopped
1 Cup Greek Olives
1/2 Cup Feta Cheese, crumbled
1 Tsp Salt
1/2 Tsp Pepper
1/4 Olive Oil
1 Cup Balsamic Vinegar, reduced to 1/2 Cup
In a large bowl, combine watermelon, cucumbers, cilantro and olives. We used halved kalamata greek olives. Yum! Sprinkle with salt and pepper. Drizzle with a bit of olive oil and reduced balsamic vinegar. Add feta crumbles. Enjoy!
To reduce the balsamic:
Put 1 cup balsamic vinegar in a saucepan.
Bring to a boil.
Drop the temperature to maintain a simmer.
Simmer until liquid reduces to less than 1/2 cup.
Cool.
